Happy 1st Wedding Anniversary to Us!

Can you believe it? Sunday has been 1 whole year since we tied the knot! Seriously, this year has flown by so fast, where has the time went?! Time sure does fly when you're having fun, that's for sure!! Beware of picture overload! We had a fabulous weekend together! It started off Friday with Anniversary massages at one of my favorite places to go, Rock Haven! It's like a little piece of heaven in the country! One word: Amazing.


After our massages we went into town and had Italian for supper, and then met up with my cousin's family for drinks and to listen to some live music. Great night!


Saturday, we started off the day having breakfast at the hotel, and then haircuts. I got about 3-4" cut off, which is a lot considering how long my hair was. It's still got some length, but shorter than what I've been used too in several months. I love it though for Spring & Summer, plus my hair grows super fast! We then headed to my {small} hometown to visit with family, and 2 very special visitors from France. Quick fill in: Mirelle & Marteen were our families guests from France. Mirelle was a foreign exchange student my grandparents hosted, the same year my dad was a senior, the graduated together. This is her & Marteen's 2nd time to visit since then, they are best friends from growing up together. Although I've met them both before, I don't remember as I was a little baby then, thinking it was in the late 80's. They are staying with my grandparents for another week, and then they will be flying back to their home in France. So Saturday we visited with them, the guys shot trap, and then we ate a wonderful BBQ that was catered. Saturday night, D & I, and my brother, Ashley, and cousins all hit the town; they were having a street dance!


Sunday, my bestie Ashley (brothers gf), made us an Anniversary Breakfast. It was so thoughtful of her, we enjoyed it! Then we loaded everything up, made our rounds to visit and say goodbye, and then off we went. We stopped and got some plants for a small garden we plan on planting this year, some meat to grill on our new (new to us) grill/smoker, and then had our anniversary supper. Dustin filled me in on some sad/disappointing news that somehow our top tier from our wedding cake couldn't be found. I was super bummed, as I was looking forward to eating it with my husband. So at 9:30pm, D's parents showed up with a chocolate cake for us to enjoy, which cheered me up. Very thankful for them!

So all in all we had a great weekend, and looking forward to the year to come!! :)

One of my best friends father in-law passed away recently, and whenever a close friend loses a loved one I like to take them over some food and/or paper goods. You can also take meals over for new parents, when someone is ill, or just because. For this I have created some bright & cheery FREE printables for you that you can fill out on your own, one for dinner (can be used for lunch or supper), and one for breakfast. Then you can attach them to your food that you are taking over, and they won't have to remember what it is or how to reheat/cook it, this is especially nice when things are frozen to be cooked later.

These 4x6 printables are downloadable for you to use for FREE, print them out on some white or colorful paper, and viola! Sorry that the last 2 aren't as big as the first 2, blogger was being wonky when I uploaded them. But I do assure you that they are all 4x6 size.


If you have a group of people that want to take care of someones meals for a period of time, check out Take Them A Meal. I've used it a couple of times when we had a group of us wanting to take new parents meals, but we wanted people to sign up on specific days. Worth checking into!

Creamy Steak Quesadilla's



Last week we grilled up some giant steaks, and I'm not sugar coating "giant" by any means! D and I had to split a whole steak, there wasn't any way either of us could eat one of those by ourselves! And the way our steak is packaged, there are 2 per pack. So we grilled both of them up, ate 1, and saved the other for leftovers. I'm not a huge leftover steak fan. Just something about warming up a delicious, perfectly grilled steak in the microwave for lunch is not that appetizing to me. D doesn't mind them leftover though. One way I will eat leftover steak is if I put it in an omelet, breakfast burrito, or I have even made fajitas with it. I would have to say that my most favorite way to eat up a leftover steak is by making these Cream Steak Quesadilla's! And don't let the name fool you, they pack quite the kick too! These are very easy and quick to throw together, so if you're looking for a quick recipe to use up some leftover steak, this is your winner!

No, I didn't use the whole steak, only about 8oz!


Ingredients (yields 2 Quesadilla's):
8oz of steak, cooked & sliced thin (can use fresh if you don't have any leftover)
2 flour tortillas
1/8 cup pickled jalapenos, chopped (about 8-10 slices)
1/2 cup cream cheese (a little less than 1/2 cup)
1/4tsp cumin
1/4tsp chili powder
1/4 cup shredded cheese (I used cheddar, but have used mexican blend before)

Directions:
1. Slice steak into thin strips, set aside.
2. Chop up jalapenos slices (I used food chopper/processor).
3. In a small saucepan on low-medium heat, stir together cream cheese, chopped jalapenos, and seasoning. Stir until creamy.
4. Add in steak, and stir well.
5. In a large skillet on medium heat, place tortilla down, and put shredded cheese on 1/2 of tortilla, and put 1/2 of creamy steak mixture on top of cheese. Fold tortilla over.
6. Grill until lightly browned, flip over, and repeat on other side.



One great thing about these quesadilla's, you can adjust the spiciness to your liking. If you want to cut down on heat, don't use as many jalapenos. You can also easily double the recipe if you need to make more than 2.
